Makes 6 servings
Quinoa Summer Salad (gluten & dairy free)
Ingredients
- 3 to 4 cups (14 oz.) chicken broth
- 1 1/2 cups (12 oz.) uncooked red quinoa –looks pretty!
- 1/4 cup olive oil
- 1/4 cup lemon juice OR seasoned rice vinegar
- Fresh ground sea salt & pepper to taste
- 1 red bell pepper, finely chopped
- 1/2 small red onion, finely chopped
- 1/2 English cucumber quartered and cut into bite size pieces
- 1/2 cup sliced almonds, toasted and chopped
- 1/2 cup finely chopped fresh cilantro
- Garnish with cilantro sprigs
Gently toss the quinoa together with the bell pepper, cucumber, almonds, & cilantro & pour the olive oil mixture over the quinoa.
Add salt and pepper to taste & garnish with cilantro leaves
